A sweet, slightly spicy and delightfully tropical drink.

Full of vitamin C and A, loaded with polyphenol antioxidants which are known to help reduce the risk of heart disease and cancer, it can also help lower cholesterol, weight loss, indigestion, heartburn and sunstroke and even stop skin sagging according to recent scientific research and thats just scratching the surface.

When I discovered a tree full of carambolas (star fruit) in the abandoned house next door the other day I was very excited to find such exotic fruits there for the taking. Well, actually the local kids pouring out of the gate with plastic bag-fulls of them alerted to me the fact there was a tree there!

After scrumping the remaining fruits a couple of days later I had almost a kilo of fruit but no idea what to do with it, so I googled star fruit recipes and was quite suprised to find so many! Mostly salads and chutneys then I found this simple recipe for star fruit and ginger juice. Yesterday was a hot day so I thought I’d try out the juice recipe. The result was a surprisingly delicious, sweet and slightly spicy yet refreshing orange coloured juice, i was never a huge fan of the flavour of these pretty fruits but i never tried this before, I will definitely be making as much as possible and looking for more recipes.

How to make Tropical Star Fruit & Ginger Juice

Ingredients:

2 fresh,  ripe star fruits, seeds removed and cut into chunks

1cm knob of ginger, peeled and chopped in four

1 cup of ice-cold drinking water

4 dessert spoons of Piloncillo Syrup or 2 dessert spoons of regular sugar

Juice 1/2 lime

Slice of star fruit for decoration if you are feeling fancy 😛

Ice to serve (optional )

Makes around 350ml of juice, enough for one large glass or two small ones.

Put all ingredients in a blender and blend thoroughly. Strain through a sieve,  serve and enjoy!

I forgot to mention the fruits I used were very ripe, maybe even overripe, they were a beautiful dark orange with brown spots, I cut off the mushy bits and threw them out. The less ripe fruits are green or yellow  and  much more tart, even sour at times so adjust the sugar and lime if the fruits are like that. I think green ones would be too sour for this, although maybe it could be worth a try as there are still loads of unripe fruit on that tree..
