Mexican Ceviche Manzanillo Style

Seafood “Cooked” in Lime Juice.

Ceviche or cebiche is basically seafood left in lime juice to marinade or “cook” before mixing in a few other key ingredients and serving with crunchy tostadas (fried or baked tortillas), salty crackers or totopos, otherwise known as tortilla chips to us non mexicans. It’s a healthy and wonderfully fresh dish to serve as “botana” the perfect companion to an ice cold beer or white wine. (more…)
