Super healthy ‘Jugo Verde’
Jugo Verde – Nopal, Pineapple, Orange and Parsley Whole Juice
A very simple blend of nopal, fruit and parsley make a super healthy whole juice to get you going in the morning.
Nopal is said to be good for curing a hangover so this is the perfect morning-after juice. If you add a stick or two of celery they say this is a great juice to help you loose weight.
So we already know about how great the Nopal is in a Salad, here is the link to my recipe for delicious Ensalada de Nopal – a typical Mexican side dish – in case you missed it, now here it is in a Juice. You can always adjust the amounts in the recipe according to your taste, one thing you should know is that the nopal is a bit slimy, so the more you use the more babosa your juice will be. British-Mexican fusion comfort food!
This made a wonderfully colourful and eclectic meal that combines a classic British beef, onions and gravy dish with a traditional Mexican side dish and a psychedelic mash! The flavours were a perfect complement to each other, my hubby said that it was just like food he grew up eating, (apart from the potatoes weren’t usually pink), and funnily enough me too, except for the cactus salad, well my mum never put beetroot in the mash either but it just goes to show that mince beef and potatoes are internationally comforting! This is a classic Mexican side dish that is usually eaten in tacos, it often comes with the selection of salsas in many restaurants or taco stands and is really good with beef or pork. It goes well with anything you would serve a salad with or as a side dish at a BBQ or buffet. Nopales, also known as prickly pear, are cheap and healthy and easy to prepare once you know how. (more…)
